History

The cultivation area for Oeil-de-Perdrix is ​​the same as for Pinot Noir. Originally from Burgundy, it grows in Valais to give fresh, fruity and velvety wines.

Vinification

The Pinot Noir grapes are pressed immediately, almost without fermentation. At this time, the juice gets a rosy hue, the colour of the eye of a partridge, hence the name which describes a voluptuous and fruity wine.
