History
The cultivation area for Œil-de-perdrix is the same as for Pinot Noir. Originally from Burgundy, it grows in Valais to give fresh, fruity and velvety wines.
Vinification
The Pinot Noir grapes are pressed immediately, almost without fermentation. At this time, the juice gets a rosy hue, the colour of the eye of a partridge, hence the name which describes a voluptuous and fruity wine.
Gastronomy
Oeil-de-Perdrix is enjoyed as an appetiser, with Asian cuisine, tapas and salads.
