GEOGRAPHICAL LOCATION
Renowned for its delicate nature, the Sauvignon Blanc variety has become perfectly adapted to the Languedoc Roussillon region. The soils here are light and composed of sand and small rounded pebbles. This ensures perfect drainage and allows the heat stored during the day to be released at the foot of the vines by night. The grapes are therefore sweet when they reach full maturity.
WINEMAKING
Mechanical harvesting. The harvesting takes place during the night from 2am because the fresh night-time air preserves the primary flavour and avoids any risk of oxidation. The wines are matured in thermo-regulated stainless steel vats.
GASTRONOMY
Ideal for enjoying at any time of day as an aperitif as well as being the perfect accompaniment to vegetable terrine, fish, white meats, sushi and sashimi.
