Merlot and Cabernet Sauvignon
To the eye, this assembly has a ruby colour with purple highlights. The nose presents delicate and subtle aromas of blackcurrant, blackberry, but also smokey notes, and aromas of red bell peppers and black pepper. Harmonious on the palate, we find aromas with acidity in the background and very fine and silky tannins with good length. This blends goes perfectly with the taste of oak barrels having accompanied it for more than 18 months.
History
Cabernet Sauvignon and Merlot are two grape varieties that can be though of as cousins in most wine regions. They adapt perfectly to both the climate and soil of Valais.
Vinification
For more than 18 months, this blend is aged in oak barrels, which gives it good ageing potential.
Gastronomy
Excellent with red meat, game, pasta dishes with rich sauces, young or extensively mature cheeses.
