Oeil-de-Perdrix is a fine and voluptuous wine with aromas of fresh fruit with a touch of acidity.
The cultivation area for Oeil-de-Perdrix is the same as for Pinot Noir. Originally from Burgundy, it grows in Valais to give fresh, fruity and velvety wines.
The Pinot Noir grapes are pressed immediately, almost without fermentation. At this time, the juice gets a rosy hue, the colour of the eye of a partridge, hence the name which describes a voluptuous and fruity wine.
Oeil-de-Perdrix is enjoyed as an appetiser, with Asian cuisine, tapas and salads.
