This elegant and renowned wine is made from Nebbiolo grapes selected and cultivated on the hills of the village of Barolo, in the Langhe region. It gives off complex flavours and aromas, especially of roses, cherries and tobacco. The body of this wine is marked by soft structure.
This wine is grown in Barolo, an area for traditional vintage, which is located on the south side of the village of Serralunga d’Alba. Over the centuries, it has areas and hillsides have been carefully selected to offer the highest quality to this wine.
Upon arrival at the winery, the Nebbiolo grapes are subjected to a quality control: the stems are separated from the berries and the latter start to ferment at between 24 and 28 °. The yeasts used for this process are selected from the indigenous strains of the “Nebbiolo” grapes and are used specifically for these grapes. Delestage occurs during air extractions to provide the yeast with oxygen. This is done to remove the grape seed that could give a too bitter taste to the wine.
Excellent with red meat, game, soups, pasta dishes with rich sauces, Tuscan ham, young or mature cheeses, and also summer barbecues.
